Finally, a homemade vegan cookie that tastes as good as it looks! When I say that these cookies are the best ever, I mean it. Crisp, sweet with a hint of salt, and a quick bake – what more could you ask for?

Begin by whisking together butter, sugar and salt. Mix well – all three ingredients should be evenly distributed. Now, stir in the water/baking powder/oil mixture and the vanilla. The texture of the dough should be light and the consistency fluid. Add the flour and baking soda at this point – stir the dry ingredients in gently. Add the chocolate chips and coffee powder. Coffee makes the chocolate more flavorful, so feel free to be liberal with the amount of the coffee you incorporate! Cover the dough with a plastic sheet and let chill for half an hour. Preheat oven to 350˚F (180˚C). Scoop the cookie dough onto a baking sheet. Bake until golden brown and the dough is spread out (12-15 minutes).
