Oodles of Primavera Noodles

When I discovered the joys of zucchini this summer, I discovered concurrently a love of pasta primavera and wanted to eat nothing else, much to my family’s chagrin. Primavera, which in Italian refers to “alla primavera” or “in the style of spring,” is a pasta dish made with lots of lightly sautéed spring vegetables.
Start by cooking pasta – boil in water and salt until pasta is cooked al dente. Chop all vegetables. Here, we’ve used cherry tomatoes, bell peppers, zucchini, broccoli, and celery. Feel free to use these and any other fresh spring vegetables you wish to. Drizzle olive oil across a separate pan on medium heat. Add the chopped vegetables, and sauté lightly, ensuring the vegetables don’t burn or stick to the pan. Toast well – flavor in this dish comes from the vegetables because it is quite lightly spiced. Incorporate pasta. Mix veggies and pasta well. Add chopped parsley and lots of parmesan. Enjoy!
