Cheesy Jalapeno Popper Bites

Are you yearning for a quick, warm, crispy, delicious snack? Here’s a fan favorite snack that also causes minimal mess: perfect for parties, rainy days, or just because J For the shells used to make these poppers, we used Athens brand phyllo dough: it’s dairy-free and egg-free. You can make the shells by hand too!

Start by chopping the fresh jalapenos into small pieces. Also, cut the pickled jalapenos into small pieces.  Shred the sharp cheddar cheese. In a bowl, beat the cream cheese. Once fluffy, add the cheddar cheese and mayo and mix it with spoon. Add the diced jalapenos, pepper, and salt, and mix them.  Add red pepper if more spice is needed. Dice the bell pepper into small squares. Place the shells on a baking sheet. Fill the shells with the prepared filling to the brim. Decorate with the diced bell pepper.

Preheat the oven to 375˚F. Place the tray inside and bake for 12-15 minutes. The shell should turn golden. Take out and let cool for a couple of minutes. Serve, and enjoy the spicy, creamy treat!
