Best Hot Sandwich: Mozzarella, Spinach, and Pesto
A Convenient Go-To
Salads and wraps are excellent ways to get a lot of vegetables in your diet, but if you’re anything like me, a morning of work might leave you ravenous and unlikely to be satisfied by a light meal. Especially in the winter, I’m hungry for lunches with some heat and which are delicious as well as filling, and somewhat healthy. This is where my favorite sandwich comes in!
My college dining hall is blessed with a panini press, which makes for convenient grab-and-go sandwich-making. My go-to recipe is as follows.
Slice a baguette length-wise and spread a generous layer of pesto on the bottom baguette. Layer a thick stack of spinach above the pesto and top that with thin tomatoes. Add mozzarella circles- I often do two pieces of thin mozzarella with one piece of American cheese in between for some variety. Add a second layer of spinach, and top with another thin layer of mozzarella. Top the second slice of bread with Italian dressing and press that onto the sandwich. Clean and spray anti-stick spray onto the panini press, before pressing your sandwich for 30-40 seconds (adjust based on your panini press) until sandwich is somewhat melty and golden-brown lines have formed on top.
