Tomato Basil Fusilli

Fast, easy winter meals are ideal for those dull days when one doesn’t feel like being in the kitchen. Well, I don’t cook much, so I’m not a reliable person to confirm that. I can confirm, however, that this light, filling pasta is delicious and a permanent fan-favorite.
Fusilli is a curly Italian pasta that gets its name from the Italian word “fuso,” meaning “spindle rod.”
Tomato-basil fusilli takes 20 minutes to make and even less time to devour!
First, boil fusilli pasta in a large pot, for about 10 minutes. Pasta should be fully cooked and soft, but not too tender. Heat a few tablespoons of olive oil in a separate
pan. Add tomatoes, salt, pepper, and any spices you wish to include. Press and flatten tomatoes using a wooden fork. Once the tomatoes have reached a thick, saucy consistency, mix with pasta, add basil and mozzarella, and serve! Enjoy!
